Fresh flour is simply 100% unsifted, whole grain flour that is milled at the time of use.


By using the resulting flour immediately, there is no time for the nutrients to degrade and no need for heat or chemical treatments to act as preservatives.

Wheat berries have 40 of the 44 nutrients necessary to life, plus antioxidants & minerals, all contained within the fiber-rich bran and nutrient-rich germ.

Once milled, the nutrients within the bran and germ begin to oxidize and degrade. By baking the flour immediately, we preserve these nutrients.

Commercial flour removes the bran and germ, leaving only the starchy endosperm. This is then bleached and heat treated to extend its shelf life.

Wheat flour is typically composed of 75% white flour and 25% whole wheat flour


Whole wheat flour has the bran, germ, and endosperm present in approximately their original quantities. It may have been refined and then enriched, or been treated with heat or chemicals


Fresh flour is made from the entire wheat berry, with all of the nutrients intact and nothing removed, and is used immediately after milling

Ingredients matter.

Each of the ingredients in our fresh flour bread is chosen with care and intention.

Organic soft white wheat berries for softness and organic hard red wheat berries for taste


Organic flaxseed oil for healthy omega-3 and

omega-6 fatty acids


Organic agave nectar (1 tbsp per one-pound loaf), vital wheat gluten, Himalayan salt, distilled water, and

instant yeast


Unbleached organic all purpose flour (less than 10% of total flour, added to aid in rising and for dusting

kneading surfaces)


We use organic wheat berries from Montana, which is known for producing nutrient-dense wheat with reduced heavy metal contamination.

We experimented with several types of grains and many recipes to find a bread that was soft, sweet, healthful and kid-friendly.


Today, this is the bread we feed our own children -- and they sneak into the kitchen to grab plain slices to snack on.


This may be the best bread you will ever have in your life -- and it will almost certainly be the healthiest.

The process

First, the wheat berries are milled into flour and mixed with distilled water to begin an autolyse cycle. Meanwhile, the yeast is proofed with warm water and agave nectar.

Then, the autolyse mixture, proofed yeast, oil, and salt are combined. The resulting dough is alternately kneaded and rested to encourage gluten formation.

Next, the dough is allowed to rise until doubled in size. Then it is degassed, divided, and shaped. The four loaves are placed in pans and again allowed to rise until doubled.

After rising, the bread is baked at high heat for a short time to encourage rising, then at a lower temperature until an internal temperature of 190 is reached.

Things to know


Bread from fresh flour does not keep like commercial bread. Because the nutrients are readily available and no preservatives are used, the shelf life is about four or five days.


The good news? The bread freezes beautifully. Slice the loaf, pop it in the freezer, and pull out slices as needed. Toast or allow to thaw one hour. You won't be able to tell a difference.

We are sisters who value healthy eating -- in moderation, of course. Jamie's degree in education and Stefannie's in biochemistry led to a shared concern over the quality of the food that we are feeding our children.


We began milling fresh flour and baking bread together last year. After many failures and often hysterical results, we have become somewhat proficient bakers, and would love to provide healthful bread for your family!


We operate under a cottage license from Stefannie's home in The Shores.

Product information

Bread is sold in one-pound loaves (usually a little over, but guaranteed at least one pound.) A one-pound loaf tin is 4.5"x8.5"


Fresh bread can be preordered for Tuesday and Friday afternoons from 3-8pm and must be ordered by midnight the day before. Please check our website or sign up for our emails for availability outside of those days.


$10 per loaf / $7.50 per loaf with a Breadscription.


Frozen bread (frozen in a chest freezer within hours of baking) can be purchased all week, subject to availability. Both sliced and unsliced loaves are available.
